Why has the limit order/stop order/stop limit order I created been executed even though the price on the chart has not yet touched the limit price I set?

There is a possibility that your order will be executed even though the previous data record on the chart shows that the price has not touched the limit/stop limit price that you have specified. This can happen because the chart shows the last traded price, while your order executes against the underlying exchange price, which can briefly reach your limit or stop price without the chart showing it.
