If I previously had a contract and/or pending transaction in the BETA version of the application, can I still have that contract when my application is updated to the latest version?

You don't need to worry because the application update to the public version will not affect all the contracts you have and your ongoing transactions. These transactions and contracts will not be lost and you can see them in your portfolio/transaction history.
